One workshop that we had that I recall being popular was "Basic Photography", taught by Tylene (at least mostly). It covered some of the concepts of "Taking you camera off auto", "Depth of Field" and "Composition" in the lecture portion, but what a lot of people seemed to like was breaking up into smaller groups to ask specific questions.
We had informal "stations" for members to explain operations & answer questions about Canon DSLR, Nikon DSLR, Canon P&S, Nikon P&S, etc.
This was open to the public and was well-attended, and was fun for all. It'd be a good after-fair workshop to bring in some of the new people that learn about us there (I think that's how it was scheduled before).
For myself, I'd like to see "How to work with a model", since lighting & technical aspects are only part of getting a good photo. Posing is equally important, and there are things to do or avoid that some of us (e.g. Me) have no clue about.

I like it. The beginning workshop is September, after the fair. Tylene is hosting that one.
I like stations for operations about the cameras. Having stations for NIkon, and Canon or others.

I think camera care would be a great workshop. Another one I feel might be good is film, I know as I've been getting more into film it's helping me understand my digital camera more as well as forcing me to take my time with my shots. I would love to find out more about film and formats as I've been using my Canon AE-1, Sears Tower Reflex TLR (120), and a Brownie Junior Six-20. I would also like to attend a composition workshop, I saw it was offered a couple of years ago.
